
Preparation time: 20-25 minutes mostly unattended
Serves: 1-2
1 large sweet potato
drizzle of ghee
spices such as cumin, coriander, cardamom, cinnamon
arame (soaked 15 minutes in water)
Slice sweet potato into 1/2 inch or thinner slices and lay on a glass or stainless steel baking dish. Sprinkle on spices. Drizzle ghee over each piece. Spread small amount of arame on each piece of sweet potato. Add a little of the soak water to the pan if you like a more moist potato. Bake in the oven at 350F for 15-20 minutes or until potatoes stab easily. Remove, cool, and eat. Have it with a main meal or take it with you for a healthy snack in the late afternoon. Be sure to give it plenty of time to digest after eating.
